  1. For the glutinous rice
  2. 300 gr white glutinous rice
  3. 300 ml coconut milk (I used 1 box 200 ml thick coconut milk KARA and mixed with 200 ml water, take 300 ml for the rice, 100 ml to cook the chicken)
  4. 1 stalk lemongrass, smashed
  5. 2 pcs indonesian bayleaves (daun salam)
  6. to taste Salt,sugar,pepper,chicken stock
  7. 1 stalk pandan leaf
  8. For the chicken filling
  9. 250 gr chicken breast meat
  10. 100 ml coconut milk (I used 1 box 200 ml thick coconut milk KARA and mixed with 200 ml water, take 300 ml for the rice, 100 ml for the chicken)
  11. 4 pcs lime leaves
  12. 2 pcs indonesian bayleaves (daun salam)
  13. to taste Salt, sugar, pepper, chicken powder
  14. Paste Seasoning for the chicken (put in the grinder)
  15. 5 shallots
  16. 4 garlics
  17. 2 pcs candlenuts
  18. 1 tsp corriander seed powder
  19. Other:
  20. Cooking oil
  21. leaves Banana
  22. Kitchen twine

Instructions to make Lemper Ayam (Chicken wrapped in Glutinous Rice)

  1. For the glutinous rice: soak the glutinous rice for few hours. Drain. Steam the rice for 15 minutes
  2. In another pot, bring to boil 300 ml coconut milk, add smashed lemongrass and pandan leaf. Off the fire.
  3. Mix in the steamed glutinous rice in the coconut. Continue to stir until the glutinous rice absorb the coconut milk
  4. Steam the rice again for 30 minutes until fully cooked.
  5. To cook the chicken: steam the chicken breasts, shredded the chicken.
  6. Heat some oil in the pan, saute the paste seasoning, kaffir lime leaves, bayleaves, until fragrant. Add the shredded chicken and coconut milk. Continue cooking until dry. Add salt, pepper, chicken powder to taste
  7. To assemble: use 20x20 cm pan. Layer it with cling wrap first for easy removal. Take half of the glutinous rice, pack it down the pan. Press hard with rice spoon/your hand - pls use plastic glove otherwise will be very sticky
  8. Put the chicken. Press hard. Lastly put the remaining half of the glutinous rice
  9. Remove from the pan, cut with plastic knives. Wrap with banana leaves and secure it with kitchen twine
  10. Using happycall pan, grill the lemper until the banana leaves turn brown and fragrant. Ready to serve :)
