  1. In a large bowl, cream together butter, brown sugar and castor sugar. Slowly add an egg, one at a time until incorporated. Add pandan extract and mix
  2. Sift all dry ingredients (AP flour, salt and baking powder) into pandan mixture and stir. (Add coconut flakes if do want). Chill in fridge.

  7. Preheat oven to 160°C (325°F for you 'Merica folk)
  8. Take pandan cookie dough and roll into balls (~45 g), and flatten them. (Can portion beforehand and assemble with mochi all at once)
  9. Roll out mochi dough into balls (~12g) and place into center of cookie dough. (Can portion beforehand yadi yadi yada)
  10. Pinch sides of cookie dough to cover mochi and roll into ball, flatten to form thick cookie shape (~2 cm < in height)

    Opt: roll into castor then powdered sugar (prevents powdered sugar melting) or

    Not opt: powder sugar x2
  11. Bake 10-15 minutes. (The longer the crispier)
